Chia and Hemp Protein Pudding

Serves 1

Ingredients:

Filling

1⁄4 cup cooked quinoa
1⁄2 cup sliced strawberries
2 tablespoons chia seeds
2 tablespoons hemp hearts
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon ground nutmeg
1⁄2 teaspoon ground cardamom
1⁄2 cup coconut milk
1⁄4 cup water
1 teaspoon honey
Extra Hemp Seeds (Hearts) and berries, to serve

Method:

  1. Mix all ingredients in a small bowl and place into a a glass storage container with a air-tight lid

  2. Cover and place in the fridge for at least 2 hours, until the mixture is set. You can make the pudding at night and leave it in the fridge until the morning.

  3. When ready, sprinkle with Hemp Seeds (Hearts) and a few berries, then serve.
