Quinoa and Hemp Tabouleh

Serves 4
Ingredients:
2 cups fresh parsley
1.5 cups cooked quinoa (1/2 cup dry)
1/3 cup Hemp Harvest hemp seeds
1 tomato, diced
1/3 cup spring onion, finely chopped
1/4 cup fresh mint
1/4 cup lemon juice
2 tablespoon Hemp Harvest oil
Salt and pepper to taste
Organic sourdough wraps, to serve (optional)
Method:
1. Cook quinoa according to packet instructions. Set aside and allow to cook.
2. If you are wanting to serve with chips, cut 6 wraps into triangle pieces. You should get 8 triangles per wrap. Drizzle a little olive oil over the top and coat with paprika. Bake in the oven for 5 minutes until golden and crispy.
3. In a large bowl add in all other ingredients. Mix well until all ingredients are combined.
4. Place in the refrigerator to chill and marinate for 15 minutes. Serve with homemade chips.
