Fluffy Hemp Protein Pancakes

6 pancakes
(GF, DF, RSF)

Ingredients:

1 cup GF all-purpose flour
3 teaspoons baking powder
1/4 teaspoon cinnamon
3 tablespoons hemp protein powder
1 cup unsweetened almond milk
1 egg
1/4 cup organic maple syrup
1/2 tsp vanilla bean extract
2 tablespoons hemp oil

Serve:
6 tablespoons coconut yogurt
6 strawberries, halved
2 tablespoons organic maple syrup
2 tablespoons hemp hearts (seeds)

Method:

  1. In a large bowl, whisk flour, baking powder, cinnamon and protein powder. Set aside.

  2. In a small bowl, combine almond milk, egg, maple syrup and vanilla bean extract.

  3. Pour wet mixture into the dry mixture and combine well. Be careful not to over mix.

  4. Heat a saucepan with hemp oil over medium heat. Using a ladle, carefully spoon the pancake mixture into the pan. One full ladle equates to one pancake.

  5. Cook for 2-3 minutes on each side. Flip the pancake once the mixture begins to bubble. 6. Serve with coconut yogurt, fresh strawberries, maple syrup and hemp seeds.
